Dairy Academy 2024 was held in Copenhagen, Denmark !!

The Dairy Science and Technology Summer School 2024 was held at the University of Copenhagen, Department of Food Science, from 24th – 28th June 2024 under the theme “Future Dairy Processing Challenges”.

During five days of summer school, early career researchers were immersed in interactive classroom activities, factory tours (GEA, Denmark &Carlsberg Research Laboratory), and followed by an opportunity to join the online symposium in the afternoons. Social events (welcome mixer &poster session, boat tour, pizza party, career fair) to encourage networking were provided on several evenings.

Topics for the summer school included:

·      industrial processing challenges (Soren Lillevang & Ulf Andersen),

·      microbiology (Paulina Deptula & Elissavet Gkogka),

·      science communication (Alan Kelly),

·      microbial caseins and chemometrics (Giovanni Barone &Frans van den Berg).

Participants visited GEA, Denmark. It was followed with lectures about dairy processing in the factory:

·      The role of dairy processing (Johnny Bonke)

·      Dairy spray drying basics (Thomas Janhoy)

·      Development tools:CFD (Rasmus Boye)

·      Dairy freeze-drying basics (Marta Scamozzi)

·      Lactoferrin case study (Nanna Borne)

·      OptiPartner system for process control (Signe Munch).

During the summer school, a short tour through the pilot plant facilities was performed, and selected laboratories at the Department of Food Science of the University of Copenhagen were visited. This was followed by a networking event: a career fair. Several guests from academia and industry discussed their career paths and presented possible careers at their institutions. This was followed by a joint dinner with the opportunity for networking and informal discussions.

Presenters at the career fair were:

·      Anne-Sofie Gottschalck Rehlund, PhD student from the University of Copenhagen,

·      Frida Lewerentz, Associate Senior Lecturer from Lund University,

·      Gabriele D’oria, Development Scientist from Novonesis,

·      Hanna Müller Esparza, Project leader from Carlsberg Group

·      Adam Fogarasi, Associate nutrition researcher from Arla Foods Innovation Centre

·      Freja Mardal, Industrial PhD student from Arla Foods Ingredients & Aarhus University.

At the end of the summer school, Carlsberg Research Laboratory, the oldest brewing laboratory in the world, was visited. Zoran Gojkovic, Director of Brewing Science and Technology at Carlsberg Group, presented about yeast and fermentation. The visit ended with a beer tasting, a magical journey through the history of beer.

Dairy Academy 2024 also included the online Dairy Science and Technology Symposium was hosted by University of Copenhagen from 24th –27th June each afternoon under the theme “Delivering with Dairy: From Primary Production to Primary Purpose”.

The main topics of the symposium were

·      The Role of Milk and Dairy Products in Healthy and Sustainable Diets,

·      Delivering Nutrition with Dairy,

·      Milk: Designed to Deliver,

·      Processing of Milk and Dairy Products: For Safe, Stable and Nutritious Products.

The symposium was targeted at researchers from academia and industry, teachers and anyone with interest in learning about the latest discoveries in Dairy Science, which were presented by 12 keynote speakers: Adam Drewnowski, Mairead Kiely, Joeska Husney, Luc van Loon, Andre Groeneveld, Wei Wei, Peng Zhou, Thom Huppertz, Daniela Barille, Marcel Wubbolts, John Tobin, and John Lucey and in addition, each afternoon featured several flash presentations from early career researchers.
